Why it tastes different here
Everything our baristas know had to be re-learned on arrival. Water boils at 71 °C in the dome. Crema sits higher. Extraction runs long and sweet.

We roast at 0.9 bar in a sealed drum so the beans behave the way they would back home. First crack arrives forty seconds early. We listen for it anyway.
Every drop is colony water, remineralised to 128 ppm for extraction. It has been through us before. We prefer not to dwell on it.

We keep colony clock time. The grinder goes on ninety minutes before dome-light, and we close when the last rover returns.
